I am trying to learn how to work with tofu. Sometimes I hit it just right, others...well, I just can't seem to get it. But I will keep on trying. I love burgers. I loved them when I was a meat eater, but I just can't seem to get anything even vaguely close. Yeah, I know, I am no longer using meat. But man do I miss a quality burger. Not that McDonald crap they call burgers. Pfffft!
But I would never go back just to have that flavor again. I am a big girl and can be the grown up. So tonight I tried another McDougall recipe. Now this one id all right, but it needs some tweaking. The burger itself held together fantastically, but it still had that tofu taste. And I even let the tofu marinade before forming the burgers. But I will keep on trying until I hit it just right. so keep on reading and when i hit the jackpot, you will know about it.
1 pound firm tofu, drained
1&1/2 cups rolled oats
2T soy sauce (we use tamari)
1T dijon-style mustard (we had none so we used stone ground mustard)
1/4 t fresh cracked pepper
1/4 t garlic powder
1/4 t onion powder
1 t grated fresh ginger
2T minced fresh parsley (we were out)

Preheat oven to 350 degrees.
Place the tofu in a large bowl and mash with a potato masher. Add the remaining ingredients and stir until well combined. Moisten your hands. Shape into 8 patties and place on a non-stick baking sheet (we have none so I took a wisp of oil and painted it on a cookie sheet).
Bake for 20 minutes on the first side; turn over and bake for another 10 minutes. Remove from the oven and serve with your favorite toppings and condiments.
I am finding that with just these two recipes, I am not missing the fat and or the sweetener. I am looking forward to more new dishes from this book.

We Pay The Price
So yesterday was our 28th anniversary, yep and to the same man. Hector wanted to take me to dinner, but told our daughter how difficult it was, now that I was a vegetarian. Has he forgotten that he has changed his eating habits quite a bit as well, even though he has not for gone meat? Well, we find out this morning, just how much our eating habits effect what we do.
Dinner was decent enough. I, of course, pick thee only vegetarian option on the menu. Yes I could eat a salad, but been there done that. So I order the black bean veggie burger with fries. (I openly admit to 'loving' fries). My husband ordered some salad with blue cheese dressing and I think small fried chicken strips. Trust me when I say there was more crap in there than salad fixin's. And lest we not forget the dressing. Nothing beats the heck out of my fresh homemade dressings.
Se upon hubby's rising he made his way to the little boys room. then he found me in the kitchen making coffee and admitted that he now understands why we do not eat out. That is the price we pay for eating healthy. But was that a complaint? I'm still not sure. By eating at home, we; know what is going into our food, like what we eat, don't get sick from it, digestive track not out of whack from it, are not drinking tons of liquid to flush out the excess sodium in whatever we ate.
But all in all it was a great experience. Oh and since it was a sports bar, I got, on a huge screen TV nothing but that UFC fighting. How glorious to view a bunch of @$%&(# trying to beat the living snot out of one another while I am trying to eat. Not to self. No more sports bars.

Soyrizo & Black Bean Burgers
OK, so I am looking for the perfect veggie burger. This one is so darned close that it scares me. I followed her direction to the letter, but if I had to make them again I would up the flour a wee bit. While ours tasted grand, they had a tendency to fall apart. But they had a wonderful bit to them, not hot/spicy, but a full Latin styled flavor. We have used this Soyrizo before and loved it then. I made them in a potato dish and boy were they great.
We have been trying to curb our processed food, even in the vegetarian world, but I think my otherwise healthy diet lets us slide every now and then. Try them and see what you think.

Soyrizo Burgers
(4 burgers)
Ingredients:
1 package of Soyrizo
1 can black beans, drained
1/2 cup all purpose flour
1 tablespoon oil
2 green onions, chopped
1/4 cup chopped fresh parsley(or cilantro)
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
In a skillet, heat Soyrizo and beans until hot. Remove from heat and stir in flour.
Allow to cool enough for handling. Using your hands, mix in the green onion and parsley, until the mixture is well distributed. Form into patties. You can pan fry these in a bit of oil, but I highly suggest basting a little oil on them and placing them directly onto a grill!"

Lentil Burger
For the record, I Love Lentils, but this recipe needs tweaking. The burger itself held together the best for ANY non meat burger I have ever made, but we definitely need to spice it up. Granted it had your basics, such as salt and pepper, but we are a spicy type of family so there will be spices added next time. So now on to the recipe.
I got this from How it All Vegan. Yeah yeah, I know you are asking, 'Is that thee only book I cook from?' Well know it isn't but I do use it a lot, did I mention a lot? And also when it is crunch time and I have not prepared ahead, I look for recipes where I either have all or most of the ingredients and go from there. And due to the fact that lentils cook up quick, we were good to go.
3/4 cup wheat germ
2 cups cooked lentils (I used 1&1/2 dry and there was left-overs)
1 cup bread crumbs
1/4 cup chopped onion
3 T olive oil
1/2 salt and pepper
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
On a small plate, set aside 2 T of the wheat germ for coating. In a medium bowl, stir (I used a potato masher) together the remaining wheat germ, lentils, bread crumbs, onions, oil, salt and pepper. Divide and shape into 4 patties. Lay down each patty in wheat germ, coating each side.
Cook on a lightly oiled frying pan on medium-high heat for 5-10 minutes, flipping occasionally. Serve like a regular burger - an all vegan patty special sauce, lettuce, soy cheese (which we did), pickles, onions on a sesame seed bun.

Bean Burger
For those of you who do not know, I bought my daughter How it all Vegan for Christmas. Well, let me tell you, this book is to die for. Very do-able recipes and not tons of weird ingredients. Do not get me wrong. I have no problem with unusual ingredient, but not so many I go bankrupt trying to purchase all of them. So for this recipe I had some cooked adzuki beans that were supposed to be for a soup but did not have many of the ingredients and this recipe jumped out at me and we have more than 75% of the ingredients. So Viola! It gets made.

Spicy Black Bean Burger
1/2 cup flour
1 small onion, diced
1/2 t dried oregano
1 small hot or jalapeno pepper minced**
1 T olive oil
1/2 medium red pepper, diced (we used green)
2 cups cooked or canned black beans, mashed
1/2 cup corn niblets (we used frozen and cut them off the cob)
1/2 cup bread crumbs
1/4 t cumin
1/2 t salt
2 t chili powder (we used chipotle powder)**
2 T fresh parsley, minced (optional)

On a small plate, set aside flour for coating. In a medium saucepan, saute the the onion, garlic, oregano, and hot pepper in oil on medium heat, until the onions are translucent. Add the peppers and saute 2 minutes until pepper is tender. Set aside.
In a large bowl, mash the black beans with a potato masher or fork. Stir in vegetables (including corn) bread crumbs, cumin, salt, chili powder, and parsley.
Mix well. Divide and shape until 5 or 6 patties. Lay down each patty in flour, coating each side. Cook on a lightly oiled frying pan on medium heat for 5-10 minutes. Or until brown on both sides. Makes 4-6 patties.
**We hat to cut down or eliminate the spice. For my hubby is most more than likely got himself an ulcer. But until he is diagnosed, we have to cut down on or out certain foods. Spice being one of them.
I would also drain the beans of all thier cooking juices to help make them hold together better. We would also up the bread crumbs to help them hold together a bit more. But other than that they were off the hook great!

Burgerfest
Add in: The Patty Melt is not toasted bread...duh to me. It is grilled like a grilled cheese sandwich. It was my lovely husband who informed me, since he was the Denny's cook that I ended up marrying.
For those of you who read regularly, I have made the switch to vegetarianism (bows deeply to her adoring fans). But in doing so, I will openly admit to missing some things. And come on girls(And any guys who read and are vegetarians) that there is something you miss form the carnivore world.
Well, I miss hamburgers. Yep, the drippy messy ones that roll down the side of your arm and sometimes makes it all the way to your elbow. But rest assured, I am steadfast and resolute in leaving meat behind. So with that said, I am exposing my daughter to three burgers I was in love with as am omnivore. And here they are for those who may want to try an new style(or old in some cases) of burger. Hope you enjoy them as much as I have.
Circle D Burger
First off, I cannot take credit for this burger. This was a popular burger when I worked at Denny's in the early 80's(Cringes at that number) and I don't remember if it was a grand seller, but I loved it. I would order that thing every shift I worked...morning shifts included. So I hope you ladies(And men) enjoy this burger.
Hamburger buns(Whole wheat preferred)
Burgers of choice(we use Boca Burgers mostly, but will purchase many different ones to try)
Lettuce
Tomato
Slice of cheese(we use cheddar)
Onions(Grilled, they must be grilled)
BBQ sauce**
Condiments of your own choosing

Cook/grill your burger as you see fit or follow thee instructions. Place the slice of cheese on the burger so you get a good melt. Then start to construct your burger. Add condiments as you see fit. The burger goes on(with cheese) then your grilled onions, and then the BBQ sauce. Place the top bun and have at it.
**Due to the fact that I have given up HFCS, I no longer purchase store bought BBQ. So if any of you ladies have one form your recipe cards, I am all ears.
Burger Italiano
Another burger from my days as a Denny's waitress(which is how I met my husband), but this one is on the simpler side.
1 slice of Sourdough bread(I actually buy the packaged bread for this. Yeah I know, but we all choose our battles, so for a once a year burger...I digress)
Burger of choice
Spaghetti sauce
Slice of mozzarella cheese
~~~~~~~~~~~~~~~~~~~
Cook your burger, and while doing so toast your bread. You can use left over spaghetti sauce our use jarred, again, your choice. Lay toast on your plate, place burger on toasted bread, then ladle on your heated spaghetti sauce, and top with mozzarella cheese. This is an open faced sandwich but oh so good.

I know some of you are Ooohing and Ahhhhing. This brings back so many memories, so I hope you enjoy this as much as I have over the years.
2 slices of rye bread(I have made it from scratch but we are out of rye berries, so store bought it is)
Burger of your choice
Grilled onions
American cheese for this one is my choice, but use what works for you

Cook your burger as you see fit with your cheese. Place on toasted rye bread and add the grilled onions and slap on your condiments. This has to be one of my classic favorites.
